Snack Bites! Party food! Whatever you want to call it, it’s here. It’s easy and quick to make and not just for the kids to love either. These Ham & Cucumber Snack Bites are the perfect little nibbles to snack on. Who doesn’t love ham, cucumber and cream cheese?
I actually showed a friend a photo of these the other day and she said, “oh, I wish my kids would eat that but they won’t”.
Then I asked her, “does your kids like ham, cucumber, cream cheese and carrots?”
“Well, yes they do”, was her reply.
“Then of course they would love it”, I said. It just looks prettier than a ham & cucumber roll up, minus the tortilla so it’s super healthy.
I love creating fun snacks for the kids after school or on weekend. Get them use to not only a variety of foods but foods that look different. I start by using all the things they already eat individually and make something creative and fun out of it. Sometimes if it looks different my kids are quick to say no, this way it teaches them to try it before judging as most of the time it’s made with food they love already.
I also have a soft spot for making things that are great for parties too. Summer party season is coming soon and we are planning a big one as soon as our garden get renovated. So I needed some practice on some good snack bites that I can serve to my guests too.
- 1 large cucumber
- 1/2 cup cream cheese
- 12 slices ham (lunch meat)
- handful of chopped chives and spiralized carrots
- Use peeler to make stripes on cucumber skin
- Cut cucumber into either 1 inch or 2 inch equal pieces will make roughly 12 x 1 in. or 6 x 2 in cucumber pieces
- Take a small spoon to scoop out the cucumber centers so you can stuff the ham down in a hole
- Fold lunch meat in half and push gently into the center hole of each cucumber
- Put cream cheese in a piping bag and add a swirl in the center of each ham center in each cucumber
- Sprinkle chopped chives and spiralized carrot pieces on top
Like all my recipes this one is no different, it’s quick and easy to make and cheap and cheerful ingredients. They are also always family friendly after all I am making it for my own family too. These bigger ones that I have photographed here I would make for adults but for kids I would make the smaller version which I did add to the recipe card for you. Just cut them in 1 inch instead of 2 inch cucumber pieces. It just makes it easier for little mouths but there is no difference between the two otherwise.
