It’s British Sandwich Week! While there are numerous ways to create a sandwich from cold to hot, toasted to not, the list is endless as much as the fillings. My personal favorite has always been a toastie. A cheese toastie with apricot jam on top. I grew up eating these for after school snacks and lunches on the weekends.
I thought since it’s British Sandwich Week I would mix it up a bit and take my new toastie recipe international. I gave my toastie a spin that has come out my new favorite toasted sandwich. Mexican Taco Toasties to be exact. The idea came to me while eating tacos that I had too much left over taco beef from our family taco night. Normally, I make it into chilli but this time I took my love for tacos and toasted sandwiches and I merged them together.
Out came a spicy, juicy, taco mixed toasted panini packed full of onions, lettuce, spinach, tomatoes, salsa, cheese, and guacamole to dip. The crunch of the toasted panini really adds to the Mexican fillings inside it. I dipped mine in a little sour cream too. It was a lovely change from normal tacos or normal toasted sandwiches.
- Freshly baked paninis x 4 (bakery)
- 500g Mince Beef, cooked
- 1 pkg Taco Seasoning
- 1 red onion
- 10 cherry tomatoes
- 1 cup grated mozzarella cheese
- 1 cup spinach, lettuce, or mixed salad
- 1/2 cup salsa
- 1/2 cup guacamole (for dipping)
- 1/2 cup sour cream (for dipping)
- Cut paninis in half
- Cook mince with taco seasoning according to package directions in small skillet
- Dice tomatoes and onions, in quarters
- Layer cooked taco beef, on bottom half panini, spoon a tablespoon or two of salsa on to beef
- Place a few green leaves/spinach/lettuce/mixed salad of your choice and few onions too
- Top with grated cheese and close sandwich with top of panini
- Place sandwich in your Breville sandwich press or grill until cheese is all melted
- Use guacamole and sour cream to dip in your Mexican Taco Toastie
- Use left over taco beef from taco night. Want it more spicy, add chilli flakes to your beef. Options are endless.
This sandwich press is so easy to use and so easy to clean. This is a huge bonus for our family as we are constantly on the go and busy. I love the nonstick ceramic where even the cheesiest toasties are only one whip away from clean. It has a low, medium, or high feature which is a great feature depending on the style of sandwich you are pressing. I find that normal bread is better on low whereas your ciabatta and panini breads work better on medium or high. I love my toasties nice and crispy. It can be stored up right or flat which I think is fab feature, saving on cupboard space.
My big rave is that this press is so versatile. I can throw the kids bagels on it with any ingredients imaginable and in seconds it’s toasted. Put together a panini for my husband and a chicken quesadilla for myself all is a matter of minutes. With a family of four and taste buds that differ we need quick, easy, and versatile to spend more time together eating and chatting than in the kitchen cooking and cleaning.
