I know it’s pancake day but I have been dying to make banana bread for a week now. There is nothing better then the whole house smelling of banana bread when it comes hot out of the oven. I love to pair a slice of it with my coffee for a relaxing, delicious afternoon snack while the kids nap!
Every time I make this recipe I change it. I throw something different into the mix whether it be raisins, coffee, chocolate, the list is endless. Today I threw in some cinnamon and all-spice. It should be called forever evolving banana bread.
It’s quick, it’s easy and takes only a few minutes to through it all together and pop in the oven!
4 ripe bananas,
1/3 cup of butter,
3/4 cup of sugar,
1 large egg
1 teaspoon of vanilla
1 teaspoon of cinnamon
1/4 teaspoon of all-spice
1 1/2 cups of flour
1 teaspoon of baking soda
Mix together your bananas and butter with a wood spoon. No need for a mixer. Then add your sugar, vanilla, and egg. Mix thoroughly and add the rest of your ingredients. I like to let my bananas go really dark, it gives the bread more flavor!
Grease a bread pan or if you prefer, put it in a muffin tray but you will have to watch the time because they will cook twice as fast. Place in a pre-heated oven at 350 F (175 c) for 1 hour. Start checking it at 50 minutes, oven cooking times can vary.
I like to sprinkle brown or white sugar on top before I pop it into the oven!
