We have teamed up with Hello Fresh to check out how easy their recipes are to make for a busy mom like me. I am not chef whilst I love sharing my recipes on my blog, I am always sharing recipes that are easy and ones that the whole family will love. I was asked to pick a recipe from the Hello Fresh website and decided on the Pork Steaks with Roasted Butternut Squash because my kids love pork and butternut squash is one of my favorite vegetables. An added bonus was that I had a bunch of butternut squash leftover from batch cooking for the baby.
What I love about Hello Fresh besides the obvious convenience of having all the ingredients shipped to you, is the recipes are rated for you on their website for difficulty level and time. So you can go through a few and see which one is your level and the time frame you have to cook that night. It’s brilliant. I chose a recipe to make where I had most of the items in my fridge already.
I don’t know about you but I am super busy with three children and a full time business to run. Add in the house chores and extra curricular activities the kids do and a new baby, having time to think of new things to make for dinner all the time doesn’t always happen. This is where Hello Fresh is so reliable. It’s like endless options of all your favorite foods put together.
The recipes are so easy to follow with photos for each step which I thought would be great for someone learning how to cook or for those more difficult level recipes I want to try out. It just might make a chef out of me yet.
Pork with Roasted Butternut Squash
a delicious Hello Fresh recipe
- 1 unit butternut squash peeled, diced
- 1 pinch red chilli flakes
- 1 unit red onion peeled, wedged
- 2 clove garlic
- 2 tbsp honey
- 4 units pork steak
- 1/4 cup pumpkin seeds
- 1 block feta cheese cubed
- 1 bag Lambs Lettuce and Bulls Blood Mix
- 3 tbsp extra virgin olive oil
Preheat your oven to 220°C. Slice the butternut squash in half lengthways and scoop out the seeds. Slice it into about 1cm thick pieces, then chop it into 1cm cubes. Halve, peel and chop the red onion into wedges - about four wedges per half.
Spread the butternut squash and onion out on a baking tray. Drizzle over half the honey, a good glug of oil, a pinch of chilli flakes (careful, they're hot!), salt and pepper. Toss to ensure an even coating. Place on the top shelf of your oven and roast until soft and starting to caramelise, about 20-25 mins.
Meanwhile, peel and grate the garlic (or use a garlic press). In a mixing bowl, combine the garlic, oil (see ingredients for amount) and remaining honey. Season with a good pinch of salt and pepper. Add the pork steaks to the bowl and use your hands to coat the pork well in the marinade.
Heat a frying pan on medium heat (no oil). When hot, add the pork steaks and fry until golden brown, 1-2 mins on each side TIP: Leave the excess marinade in the bowl, we'll use it later! We will finish the pork steaks in the oven, so don't fry them for too long or they may overcook! When they are done, simply remove the pan from the heat and wait till the veg is ready for them.
When the veg has been cooking for 20-25 min and is crispy, turn it and lay the pork steaks on top, ensuring you tip any marinade leftover from the bowl onto the tray. Scatter over the pumpkin seeds. Return the tray to the oven to cook for a further 8-10 mins. TIP: The pork is cooked when no longer pink in the middle. When the pork is done, remove it to a plate and cover it loosely with foil to rest while you finish up.
Serve the roasted veggies in bowls. Crumble over half the feta cheese. Slice the pork into 1cm strips and lay on top of the veg before crumbling over the remaining feta. Pop a handful of salad on the side and pour over any juices from the roasting tray - the flavor is delicious. Enjoy!
See how easy it is and it guided me the whole way which I really like in a recipe. The whole family enjoyed a new lovely meal together. We even had some new flavors we haven’t really tried together too. I love trying new foods with my kids. I always try to avoid having picky eaters. The rule of thumb in our house is you try it every once in a while just in case your taste buds have changed. Did you know your taste buds change continuously throughout your life? I know I used to hate broccoli and now I can’t eat enough of it. Maybe there is hope for tomatoes one day… hmmm…
I love hearty good. I love food that makes you feel full but like you ate something full of nutrients and goodness. It’s all about moderation with treats and extras and I love teaching this to my kids too. They are very aware that ice cream, pop, and candy are a rare treat and shouldn’t be overindulged in. I also am proud to say if I ask them what they want for dinner they are 99% of the time going to start with a vegetable like broccoli or green beans in their list.
