You can’t beat a good Strawberry Bread recipe for Mother’s Day can you? There is nothing more that says I love you Mom, then baking something homemade and sweet for her special day. Or for Grandma, Aunty, or a sister perhaps. Let’s celebrate all the moms of the world with something sweet this year.
I couldn’t decide between making a strawberry cake or a strawberry bread this year. I have always been more of a bread than cake girl so I went with a strawberry bread recipe packed full of you said it, “strawberries”. It is strawberry season coming up after all.
So what will you be baking this Mother’s Day? It’s such a special day for me because I get two Mother’s Day a year one in March in the UK and because I am American, I get another one in May too. Sorry Dad’s USA is the same day as the UK so Mr P gets only one! But I think after moving across the world it’s the least my family can do is still celebrate my own holidays too. (selfishly it’s nice to have two special days, “what can I say?”)
Strawberry Bread Recipe:
Strawberry Bread Recipe
a sweet and delicious bread for celebrations
- 2 cups self-raising flour
- 1 cup brown sugar, lightly packed
- 1 tsp baking powder
- 3 small riped bananas, smashed
- 2 eggs, whisked
- 3/4 cup butter, melted
- 1/2 cup buttermilk
- 1 1/2 cup chopped strawberries
- 1 1/2 cup strawberries quartered for topping
- 1 tsp caster sugar
Preheat oven to 180C.
Grease and line the base of loaf pan with baking paper. Overhang 2 sides to pull bread out.
Mix flour, sugar, baking powder in large bowl.
Whisk the bananas, eggs, butter, and buttermilk in medium bowl.
Add wet ingredients to dry ingredient in large bowl, combine. Fold in 1 cup of strawberries.
Pour into greased loaf pan and bake for ONE HOUR or until skewer comes out clean.
Let cool completely on wire rack.
Use a tub of Betty Crocker's Cream Cheese frosting (plain).
In small saucepan, cook 1/2 cup finely chopped strawberries with 1 tsp of caster sugar until it because like a sauce.
Let cool completely and whisk into the cream cheese frosting.
Alternatively make homemade cream cheese or buttermilk frosting and fold in strawberry sauce.
Top with 1 1/2 cups of quartered strawberries, leave green stems for a pop of color.

It’s about Mother’s Day memories too. Eating delicious food always brings people together.
I think my favorite UK Mother’s Day was when I took both my mother in law and my own mother was visiting from America and we all went out for afternoon tea together. It’s rare for us to be able to celebrate it together living in different countries which made it that much more special.
My favorite USA Mother’s Day memory would be the kids making me breakfast in bed with fresh picked dandelions and we didn’t go out or do big presents either. We went to the park, they gave me handmade cards and everyone just enjoyed the day together as a family. Those are very special days to remember.
On the recipe card I did put some alternative notes for you to choose from if you prefer buttermilk frosting instead of your strawberry bread with cream cheese frosting. I personally prefer cream cheese frostings on my breads and buttermilk frostings on my cakes.
