Mexican Style Egg & Beef Burritos

Ingredients

  • 6 eggs
  • 1/4 cup milk
  • 500 g mince beef
  • 1/2 onion diced
  • 1 red pepper diced
  • 6 flour tortillas
  • 1/2 cup grated cheese
  • 1/4 cup hot salsa
  • salt & pepper

Instructions

  1. Cook mince beef in frying pan with diced onion and peppers
  2. Drain any grease leftover
  3. In small bowl, whip eggs and milk together
  4. Add to frying pan with cooked beef mixture
  5. Cook on medium while stirring constantly so eggs do not stick to the bottom
  6. Add salt & pepper to taste

For burritos

  1. Place a scoop of cooked eggs & beef mixture into a mini tortilla
  2. Add grated cheese and salsa on top
  3. Roll tortilla shut and enjoy!

Recipe Notes

Egg and beef mixture can be put on toast or ate separately as alternatives.
