Egg-Free, Dairy-Free, Nut-Free Chocolate Cupcakes

...still with the same great chocolatey taste

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 5 Tbsp. vegetable oil
  • 1/4 cup cocoa powder unsweetened
  • 1 Tbsp. white vinegar
  • 1/2 teaspoon salt
  • 1 cup cold water
  • 1/2 cup of nondairy semi-sweet chocolate chips
  • 1 tsp. baking soda
  • 1 tsp. vanilla extract

Instructions

  1. Preheat oven 350 degrees F (180 degrees C)
  2. Place cupcake liners in your cupcake pan
  3. In a large mixing bowl, combine flour, salt, sugar, cocoa, powder and baking soda
  4. Mix well, add oil, vinegar, and vanilla extract
  5. Mix well again, add cold water and blend until smooth
  6. Stir in chocolate chips
  7. Fill cupcake liners 3/4 full, leaving room to puff up
  8. Bake for 20-25 minutes, check often with a toothpick
  9. Cool on rack
  10. Frost to your preference or leave plain
