Chunky Potato Soup

a delicious revamp of my Momma's potato soup

Ingredients

  • 1/2 cup unsalted cubed butter
  • 1/2 cup flour
  • 1/2 gallon milk 4 pints
  • 5 large potatoes peeled, diced into medium cubes
  • 1 1/2 lbs. beef mince meat
  • 1 onion diced
  • 1/2 tsp. garlic salt
  • 1/2 tsp. onion powder
  • 1 can sweetcorn*
  • 1 can garden peas*
  • salt & pepper to serve

Instructions

  1. Cook beef with onions, drain grease afterwards
  2. Boil potatoes until slightly soft, don't over boil
  3. Add corn, peas, cooked beef & onions to drained potatoes in large pot, set aside
  4. In large skillet, melt your butter
  5. Slowly add your flour and stir constantly
  6. Butter and flour will make a dough like mixture
  7. Slowly add your milk in and stir completely before adding more
  8. After all milk has been added to butter and flour mixture, keep stirring until thick
  9. Add white roux sauce over your peas, corn, beef and potatoes in large pot and heat together
  10. Salt and pepper to taste
  11. Serve with crusty bread or crackers

Recipe Notes

Why not add a 1/2 cup of crispy, cooked bacon or grate cheese on top with cajun spice for a spicy flare?
