Honey Mustard Roasted Sausages & Potatoes

Ingredients

  • 1 large red onion cut into wedges
  • 2 red peppers cut into quarters
  • 2 tbsp olive oil
  • 8 Butchers Choice Lincolnshire Pork sausages
  • 1 large vine tomatoes cut in quarters
  • 3 tbsp clear honey
  • 1 tbsp mustard

Instructions

  1. Heat oven to 200C/180C fan/gas 6
  2. Place onion and pepper in a roasting tin, drizzle over the oil
  3. Roast for 10 mins
  4. Place sausages, tomatoes, in and around the veg
  5. In a small bowl, whip together the mustard and honey
  6. Drizzle the glaze over the sausage and vegetables
  7. Bake for 15-20 mins
  8. Turn the sausages halfway, until the sausages are cooked
  9. Serve with Independent Pitta Bread and rocket salad
