the hearty but healthy option for Father's Day dinner
Preheat oven to 200 degrees C
Lightly boil both Brussel Sprouts, and (peeled, diced) Sweet Potatoes in same pot for about 5 minutes.
On a cookie sheet, place meatballs in the oven to bake for 5 minutes.
In large casserole dish, mix oil, lightly boiled sprouts, sweet potatoes and spread out evenly in the dish.
Place meatballs evenly apart and add bacon lardons on top.
Cover with foil and bake for 10 minutes.
Take out of oven, stir ingredients, add walnuts on top and salt and pepper if you like, keep uncovered and bake for a further 5-8 minutes.
Serve with warm butter and bread.
Why not try with a bit of balsamic vinegar on top too?
