Zucchini Bread with a Lemon Glaze

Ingredients

Zucchini Bread

  • 3 cups flour
  • 3 eggs
  • 2 cups sugar
  • 1 cup veg oil
  • 2 cups grated zucchini courgette in uk
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 cup sour cream

Lemon Glaze

  • 1 1/2 cups confectioner's sugar
  • 3 Tbsp fresh lemon juice

Instructions

Zucchini Bread

  1. Preheat oven 350 F (175 C)
  2. In a large bowl beat together eggs, sugar, and vegetable oil together
  3. Stir in zucchini and sour cream
  4. In separate bowl mix together flour, baking powder, baking soda, and cinnamon
  5. Add to zucchini mix.
  6. Pour batter into 9x5 bread pan or a large muffin pan
  7. Bake 70 minutes or until tooth pick comes clean in the middle
  8. Let cool!

Lemon Glaze

  1. Mix confectioner's sugar and lemon juice well
  2. Use a spoon to zigzag over top after bread has cooled

Recipe Notes

*Optional: Add a 1/2 cup chocolate chips or raisin for an alternative taste
