Oatmeal Courgette (Zucchini) Cookies

Ingredients

Cookies

  • 3/4 cup unsalted butter
  • 1/2 cup sugar
  • 1/2 cup light-brown sugar
  • 1 cup flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 tsp vanilla
  • 1 cup grated zucchini
  • 1 cup oats
  • 1/2 cup chopped walnuts

Glaze

  • 1/4 cup melted butter
  • 2 cups powdered sugar
  • 2 Tbsp milk
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees F

Cookies

  1. Mix flour, cinnamon, baking soda, baking powder and salt in a small bowl
  2. In a large bowl, beat butter and sugars until smooth and fluffy
  3. Beat in egg and vanilla
  4. Beat flour mixture into butter mixture
  5. Mix in courgette (zucchini), oats and nuts together
  6. Must refrigerate for at least 1 hour
  7. Scoop a large spoonful of dough onto parchment lined cookie sheets
  8. Bake until edges are golden brown about 12-15 minutes
  9. Let cool

Glaze

  1. Melt butter in the microwave
  2. Sift powdered sugar into a medium size bowl
  3. Add the melted butter to the powdered sugar
  4. Add milk and vanilla
  5. Beat until smooth
  6. Drizzle over cookies

Recipe Notes

You can add chocolate on top instead for a sweeter cookie or omit the glaze for a healthier option
