Healthy Oat Bars

Ingredients

  • 1 cup flour
  • 1 cup grated coconut
  • 3 cups large oats
  • 1/8 cup Truvia sweetener
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup melted coconut oil
  • ¾ cup honey
  • ½ cup Tesco 4 seed mix sunflower seeds, golden linseeds, pumpkin seeds, sesame seeds
  • 1 cup chopped mixed nuts walnuts, almonds, pecans
  • 1 cup chopped mixed dried fruit

Instructions

  1. Preheat oven to 250 degrees F (140 C)
  2. Line deep cookie sheet with parchment paper
  3. In large bowl mix flour, sweetener, oats, baking soda, salt, grated coconut
  4. In small bowl mix nuts, seeds, fruit
  5. Add small bowl mixture to large bowl and mix
  6. In a saucepan, melt coconut oil and add honey, mix well
  7. Add to large bowl of ingredients and mix well with your hands
  8. Press combined ingredients firmly flat on top of parchment paper on your cookie sheet
  9. Bake for 12-15 minutes
  10. Turn oven off and leave bars for another 10-15 minutes
  11. Allow to cool on counter top and cut into bars or squares which ever you prefer

Recipe Notes

To sweeten this up: substitute 1/4 cup of sugar instead of sweetener and add chocolate chips to mixture before baking. Or why not drizzle melted white chocolate on top for a tasty treat?
