Sausage & Spinach Pasta

  • 12 ounces spaghetti
  • 12 ounces Butchers Choice Cumberland sausages casings removed
  • 1/2 cup diced onion
  • 2 large garlic cloves chopped
  • 1 cup spinach
  • 4 chopped Independent plum tomatoes
  • 1/2 cup whipping cream
  • 1/4 cup slivered fresh basil leaves
  • Shaved or grated parmesan cheese


  1. Cook pasta according to package directions
  2. In a large pot over medium heat, cook sausage, onion, and garlic
  3. Stirring frequently, until sausage starts to brown
  4. Add spinach and tomatoes and cook, cover, until spinach wilts
  5. Stir in cream
  6. Add cooked pasta to a shallow bowl and top with sausage & spinach sauce
  7. Sprinkle parmesan cheese and basil on top to serve

Serve with warm crusty bread and butter
