Foil a 9 inch casserole dish

In a large pan, heat together sugar, butter, evaporated milk, corn syrup, pumpkin, pumpkin spice on medium heat

Stir constantly until it comes to a rolling boil

Use a thermometer and heat and stir until 235 F degrees just over 10 minutes

Remove pan from heat and stir in white chocolate chips

Add marshmallow fluff and vanilla, mix well

Quickly pour into your dish and smooth out with a spatula

Immediately add your chocolate sprinkles on top before it hardens

Let stand for 2-3 hours or completely cool

Cut into squares and serve
