Preheat oven to 180 Degrees C.
Roll out one puff pastry sheet onto parchment paper and cut into a Christmas Tree Shape.
Spread a thin layer of Lotus Biscoff spread on top.
Roll out the other puff pastry sheet and flip the first puff pastry sheet with the Biscoff on top and cut out Christmas tree shape again. (so you have a xmas tree shape with biscoff in the middle).
Cut lines sideways, along both sides of the Christmas tree, start above the tree trunk to the top. Avoid touching about an inch in the middle as if the tree trunk ran all the way up.
Pull each strip that was cut up a little and twist twice and lie back down. Continue until all "branches" are twisted.
Beat your egg in a small dish, to brush the entire top with egg.
Place puff pastry Christmas tree that is still on parchment paper on a cookie sheet and put in the oven.
Bake 10-12 minutes or until perfectly golden brown. Watch closely oven times may vary.
