Is it bread? Or is it a birthday cake? Surely, the layer of frosting on top classifies this delicious easy recipe as a healthier birthday cake!
It was hubby’s birthday last week and he requested something that had a little more nutritional value than normal birthday cake. So I thought why not mix my favorite bread I make courgette (zucchini) bread with a few other healthy additives.
I was pleasantly surprised it was delicious! I absolutely love the lime flavor in the frosting and in the cake. You could use lemon if you prefer it’s flavoring more too. Switch it up.
Just for fun we made it in a round bundt cake pan because whilst we have been renovating all my pans are still packed up. Added a new style to the traditional round birthday cake pan.
Lime, Avocado and Courgette Birthday Cake
This healthier twist on a birthday cake is as delicious as it looks
Ingredients
- 350 g courgette / zucchini
- 80 g ripe avocado (peeled and no stone)
- 75 ml sunflower oil
- 3 large limes 1 lime for icing
- 175 g caster sugar
- 3 large eggs
- 1 tsp vanilla extract
- 350 g self-raising flour
- 1 tsp baking powder
- 1 tsp turmeric
- 300 g icing sugar / powdered sugar for icing
- 4 tbsp milk for icing
Instructions

Preheat oven to 180 C degrees. Oil and line large cake pan.

Coarsely grate courgettes/zucchinis and squeeze dry in towel.

Blend avocado with oil until smooth.

Mix courgette/zucchini with avocado, oil, two limes zested and juiced, vanilla, sugar, and eggs.

Add flour, baking powder and turmeric.

Bake in cake pan for 15-20 minutes or until knife in center comes out clean.

Let cool while you make the icing.

Sift the icing sugar/ powedered sugar in a bowl, squeeze the third lime in and add milk. Add more sugar if you want it thicker or more lime juice if it's too thick.

Pour on top of cooled birthday cake and add lime zest on top of icing.
The great thing about this recipe is you can make it into cupcakes, bread loaf, birthday cake or whatever else shape you desire. It’s just as tasty.
The avocado makes the cake moist and fluffy without the avocado flavor so don’t worry if you don’t necessarily like avocados. But remember avocados are good for you and paired with lime and courgette it helps this cake be a healthier birthday cake.
