Good morning! It’s been a tough last ten days for me as I am on a thirty day no junk food challenge with my momma here in the USA but at the same time I have come up with some amazing healthy recipes along the way. I can’t wait to share them with you over the next few weeks. They are healthy, and convenient meals so we can keep up with our busy lives while steering clear of those extra pounds. I still have some treats to share too, don’t worry, although I am relying heavily on my Dad and kids to tell me how they taste as I won’t be having any. I know, talk about torture. But I am excited to share this recipe with you that has so many combinations I couldn’t possibly list them all but here is my favorite combination so far.
There is nothing better than waking up having your coffee and your breakfast made for you. I love this recipe in jars because you can have your week’s worth of breakfast all made up for you with various combinations. No one wants to eat the same breakfast every day. Whether you follow my bananas, blueberries with honey and coconut combination or go for one of my substitutes below, your options are endless. Each morning, you could be greeted with a different combination just omit things you may not like.
I absolutely love large coconut flakes but you could use grated coconut too. I think it adds flavor while also adding texture but if you hate coconut omit it. You could use lemon zest on your blueberries, be naughty and grate chocolate on your strawberries, add peanut butter to your bananas, eat pineapple with kiwi, or maple syrup on top of a layer of apricots. Long story short…throw what you want on this and create your own amazing overnight breakfast oatmeal in a jar.
This ties well into the diet plan my momma and I are doing this week. For our thirty day no junk challenge we do a different diet plan each week to help us along the way and make sure we don’t get sick of eating the same thing every day. I have many recipes I have made up from a long list of foods that are great for you. I am really trying to change my bad habits of over eating goodies and too much sugar in my diet. I can’t wait to share with all of you the results. This recipe is so easy to make as all my recipes are and family friendly.
- One jar
- 1/3 cup of steel cut oats
- 1/4 cup of unsweetened almond milk
- 1/3 cup of Non-fat Greek Yogurt
- half a large banana, sliced
- 1/3 cup of blueberries
- 2 tbsp diced walnuts or almonds
- 1/4 cup of coconut grated or shavings
- 1 tbsp of honey or vanilla extract or cinnamon (depending on the flavor you like or omit)
- Layer oats at the bottom of the jar
- Pour almond milk on top
- Add greek yogurt for your next layer
- These three ingredients are your base and you can now add whatever you desire
- I layered bananas then blueberries
- Drizzled honey on top of fruit (you can put your cinnamon or vanilla here instead)
- Topped with coconut shavings and walnuts
- Put lid on it and pop it in the fridge overnight
- In the morning you can eat it straight from the jar cold or pour into a bowl and heat
- You can literally make thousands of combinations, for a more sweeter breakfast use raspberries or strawberries...why not try pineapple with coconut for a tropical vibe. Would love to hear what you come up with.
For honey substitute vanilla extract, cinnamon, maple syrup, jam, or plain sugar just remember to keep in small to stay on healthy track.
For walnuts substitute any nut or prefer almond butter or peanut butter as an alternative, scoop that on top.
For fruit substitute strawberries, raspberries, pineapple, apricots, oranges, blackberries, apples, grapefruit, kiwi, or any other fruit you love. I like to pick only two to combine together so the flavors don’t get out of hand. But fruit is good for you so go wild.
The best part of this recipe is you can prepare it ahead of time, I like to make four different combinations up for the next few days and put them in the fridge. I wouldn’t do a full week or your fruit goes a little soggy by Saturday / Sunday. I also love this recipe cold, straight out of the jar. The almond milk soaks into the oats and leaves them so soft overnight that it doesn’t need to be cooked. But if you prefer your breakfast hot, go for it. Pour it into a bowl and pop it in the microwave. My momma loves her’s piping hot in the morning. It’s great for the whole family if you want to make a bunch up for the week so they have a well balanced, nutritious breakfast before school. I know I will be making these for B before school so he is prepared for his busy school day. I am a huge fan of anything I can make ahead of time and just grabbed for convenience and it’s a major bonus if it’s healthy too.
