I have always been a huge lover of courgette (zucchini) bread and also a lover of oatmeal cookies. Today, while the rain poured down and swimming lessons were closed for half term I wondered what it would be like to mix the two together. I am sure this has been done before but I had yet to test it out myself. I was in the mood for a little baking with Missy Moo while Buba was at nursery. Rainy days are always good for that. The added courgette means I can tell myself it’s one of my five a day right?

Oatmeal Cookies With A Twist

I used the basic ingredients for oatmeal cookies and tweaked it a little; less oats and added cup of grated courgettes (zucchini) more cinnamon and brown sugar. The combination turned out better than I ever expected it to. It was exactly like having my bread and oatmeal cookie together. I made my favorite go to glaze sauce on top for a little added sweetness. I can say I am so glad it was raining today and I get to share this with all of you. Don’t be put off if you hate courgette (zucchini) either, I am not a fan but in breads and now cookies, quite the opposite, I am in love. 

My momma always says, “if the dough is good the cookie will be good”. Missy Moo and I might have licked the bowl and spoons, completely clean, after scooping out our cookies. It was delicious. I love cookie dough and it looks like my daughter is just like her momma who is just like her grandma! These traits seem to follow us in this family!

I love cookies with crushed walnuts and I always put walnuts in my bread and in my oatmeal cookies so I kept it in this recipe too. The kids love walnuts and they are good for us right? Another bonus… for eating cookies!

Oatmeal Courgette (Zucchini) Cookies

  • 3/4 cup unsalted butter
  • 1/2 cup sugar
  • 1/2 cup light-brown sugar
  • 1 cup flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 1/2 tsp vanilla
  • 1 cup grated zucchini
  • 1 cup oats
  • 1/2 cup chopped walnuts


  • 1/4 cup melted butter
  • 2 cups powdered sugar
  • 2 Tbsp milk
  • 1/4 tsp vanilla extract


  1. Preheat oven to 350 degrees F


  1. Mix flour, cinnamon, baking soda, baking powder and salt in a small bowl
  2. In a large bowl, beat butter and sugars until smooth and fluffy
  3. Beat in egg and vanilla
  4. Beat flour mixture into butter mixture
  5. Mix in courgette (zucchini), oats and nuts together
  6. Must refrigerate for at least 1 hour
  7. Scoop a large spoonful of dough onto parchment lined cookie sheets
  8. Bake until edges are golden brown about 12-15 minutes
  9. Let cool


  1. Melt butter in the microwave
  2. Sift powdered sugar into a medium size bowl
  3. Add the melted butter to the powdered sugar
  4. Add milk and vanilla
  5. Beat until smooth
  6. Drizzle over cookies

Recipe Notes

You can add chocolate on top instead for a sweeter cookie or omit the glaze for a healthier option

Oatmeal Courgette Cookies Tips

Glaze Or Dip In Chocolate

I had to share my amazing ‘go to’ Glaze Sauce on the recipe card with the courgette cookies recipe because it just completes the entire cookie. My first attempt was going to be half dipped in melted chocolate but I was all out of baking chocolate. I call it my go to glaze sauce because it literally can be poured on any dessert and I always have milk, butter, vanilla and powdered sugar in my house! That’s all it takes to whip this sweet glaze up in seconds. Great for bundt cakes, chocolate squares, cookies, pastry streusels, you name it!

Don’t Overbake!

I usually over bake cookies so I kept an eye on these closely. It’s easy to do when you are a mother and amateur baker. I waited until these were slightly golden brown and whipped them out of the oven to cool. You can see from the bite I took, the inside was fluffy like bread. I put down large scoops to make thicker cookies but you could scoop out a smaller version, flatten them and cook longer for a crispier cookie crunch!

    • Oh these were so delicious. The kids were raving about them. You got to test them out for yourself. The drizzle does make a huge difference too. It’s like bread in the shape of a cookie.

    Just looking at the recipe to try and wasn’t sure about the butter measurements for the cookies. Is it 3/4 cup or 1/2 cup? Ingredients list says 3/4 but then the instructions state 1/2 cup. Thank you 🙂
