It’s finally here, my delicious Parmesan Stuffed Courgettes (zucchini for my American peeps). The one I have been teasing you on social media with for the past two weeks. Apologies for the late posting of this delicious recipe we have been battling the bugs in this house. But it’s here now and oh it was worth waiting for I promise. It’s quick. It’s easy. The whole family will love it too.
I am constantly baking courgettes with random stuffing. I have been know to fill it with left over chilli to left over tuna. There isn’t anything I won’t fill my courgettes with and bake. It’s such an easy side dish or even a main meal depending on what you are putting in it. I love the various things you can do with courgettes and feel healthy making them for the family too. This recipe is just one of my favorites that I like to do with courgettes for the kids. It has a crunch to it and that melted parmesan makes it mouth watering too. - 3 large courgettes (zucchini), halved
- 1 tbsp extra virgin oil
- 3 oz breadcrumbs
- 2 oz shaved parmesan chunks or grated
- 1/2 oz basil, fresh, finely chopped
- 1/2 oz chives, fresh, finely chopped
- salt and black pepper
- Preheat oven 180 C / 350 F
- Use a teaspoon to hollow out inside of halved courgettes (zucchini) put in small bowl for later
- Put halved courgettes on greased cookie sheet
- In frying pan, heat oil add insides of courgettes, cook until golden brown
- Transfer cooked insides back into small bowl and add breadcrumbs, parmesan (save a little for top) , basil, chives
- Pour breadcrumb mixture into hollowed out courgettes and add a pinch of parmesan to top
- Salt and pepper on top
- Cover with tin foil
- Pop in oven for 15 minutes with tin foil on top, remove foil and bake for another 15 minutes or until breadcrumbs are golden brown
- Serve with creme fraiche on top!
I love baking with fresh herbs. This you could use any combination you like but I liked to use basil and chives together. I have been trying to grow my own herbs in the kitchen lately and what a difference it makes to your food. I never realized. Fresh really is best! Do you grow your own herbs? Any great tips for keeping them alive I tend to have to keep getting new plants hahaha No green thumb here.
