Vegetarian Mango, Lime and Chilli Potatoes Recipe

Potatoes have a reputation for being stodgy, a diet no, no or just a side dish. Well, let’s put those old fashion thoughts behind us along with those old fashion ways to cook potatoes. We are thinking beyond mash potatoes and your roasted potatoes. They may be scrumptious classics but there is so many other ways to add potatoes to your recipes and diet. They are the healthy carb that we need to stop avoiding. Think…potatoes are more than a bit on the side! And I hope you will love what I created for you today to do just that. 

Vegetarian Recipes With Potato

Moving towards I am creating more vegetarian and vegan meals for the summer as my parents for health reasons have had to switch to a meat free diet, I was excited to create some dishes that are still full of flavor for them. We are originally from the potato state in America so this one I know will quickly become a firm favorite in our family, and the other half of the family is Irish and we all know how much they love potatoes too. There is a good reason for it. They are tasty! We already love a good leek and sweet potato soup,  so what next?

Potato As A Main Ingredient

I kept the vegetarian aspect of this dish while focusing on potatoes as the many ingredient. I boiled the potatoes instead of roasted or frying them for a healthier option. It’s packed full of steamed vegetables too. But the thing that makes this delicious potato bowl so tasty is the Mango, Lime and Chilli dressing. Only enough to coat the vegetables and give off a tangy and sweet flavor. The rest of that good taste is left to the potatoes.

Mango Lime And Chilli Potatoes

This dish is great for making for the whole family when you don’t have much time. As with all my recipes I make and share here on my blog, they are all quick and easy to make. I have three little ones that are constantly on the go to sports and various activities after school so I need meals that will be easy to make at a moments notice. This recipe is also great if you have guests coming round and you don’t want to waste all that time in the kitchen rather than catching up with friends and family. It’s an easy recipe to make for a large or small group which makes this recipe versatile too. If you are cooking for people with a mix of flavour preferences then just put chilli flakes on the table so everyone can make their own chilli potatoes exactly how they want them.

Vegetarian Mango, Lime, and Chilli Potatoes

Ingredients

  • 1 kg New Potatoes
  • 1/2 red pepper
  • 1/2 yellow pepper
  • 1 red onion
  • 190 g Asparagus And Tender Stem Broccoli buy together or separately
  • 90 g Mango And Chilli Dressing
  • 140 G Good4u Lentil Sprout Mix
  • feta cheese crumbled on top
  • salt and pepper to season

Instructions

  1. Slice potatoes, side ways 1 cm thick so you make little slices circles
  2. In large pot boil, sliced potatoes for 2-3 mins, slightly before soft
  3. In another pot steam peppers, broccoli, asparagus, and red onion until tender
  4. Place all cooked vegetables in large skillet
  5. Add lentil sprout mix and dressing, mix well until coated
  6. Cook on medium for 2 mins
  7. Crumble feta cheese on top and add salt and pepper to taste

Recipe Notes

To make it spicy add red chilli flakes before serving.

More Than Just A Side Dish

I tested this out on friends a few years ago and it was a huge hit. The feta cheese paired nicely with the mango, lime and chilli dressing. I even tossed this over some fresh spinach to serve so it was as beautiful as it was tasty. Potatoes have always been a firm favorite of my in my staple diet. While the trend seems to be steering clear of them with all these no carb diets it’s really the carb you don’t want to skip. It’s the good one and tasty too. I always leave me skins on my potatoes even if I was make a classic like mash potatoes. They are packed full of nutrients so it’s a waste to cut them off and food waste to throw them in the trash.
