Happy Easter Everyone! Ok, so it’s not quite Easter yet but we have been celebrating all week with baking with Grandma and decorating our Easter tree with the kids. It’s been a great week having my mom here with us. We created some scrumptious Easter Snickerdoodle cookies that will make you drool.
I love an easy quick recipe that is fun to bake with the kids or have little steps they can help with and also make it easy for me not to mess it up. I am no chef but I love baking up a storm in my kitchen. It’s been such an honor having my mom visit and baking along side me. I am so sad to see her go back home tomorrow. She is the master chef in the family and I only hope one day I cook and bake as good as she does.
So we whipped up this adorable easter egg nests for friends and family to share. I love a great snickerdoodle cookie and you can top it with so many different things for various holidays. It’s a great base cookie.
Easter Snickerdoodle Cookies
- 1/2 cup unsalted butter
- 2/3 cup sugar
- 1 small egg
- 1 tsp vanilla
- 1 1/2 cup flour
- 1/2 tsp baking soda
- 1 1/4 tsp cinnamon
- 1/4 tsp salt
- Topping: 1/4 cup sugar & 1 tsp cinnamon
- Frosting: One tub Betty Crocker Vanilla & green food coloring
- One bag of easter mini eggs
Preheat 375 F degrees (190 C)
Mix topping in a bowl and set aside
Cream butter for one minute until smooth
Add sugar, mix until fluffy
Mix in egg and vanilla and set aside
In small bowl, whisk flour, baking soda, cream tartar, cinnamon, salt
Add dry ingredients in slowly to butter mixture
Dough will be thick, roll into one inch balls
Roll balls in topping to coat each ball
Set on parchment paper on a cookie sheet
Slightly flatten the balls to create a flat top
Bake 10 minutes or until sides are lightly brown
Use a piping bag for the easter nest grass and drop two easter mini eggs on top
Repeat until all cookies are decorated.
These are great for bake sales, kids parties and easter baking. Cookies that the whole family will love and the kids can join in the fun of making. It’s a sugary delight with cinnamon and frosting, who doesn’t love that combination?
I may not be a chef but my baking skills come from my momma. She has taught me everything I know and I still learn from her each and everyday.
