Christmas is my favorite time of year and most certainly my favorite holiday and not just because my birthday comes along with it. Although I do like the two days of celebrations in a row! Christmas is a time for families to gather together, friends too and make memories. There isn’t a Christmas in my childhood that doesn’t have a memory of numerous family members piling in my parent’s kitchen cooking and baking together. I think baking as a family is a great way to create long lasting memories and bond especially with children. Now that my two toddlers are getting older we have been getting in the kitchen more often to bake together. I have numerous Christmas baking gift ideas for them to help me with this year.

We did a trial run of these amazing Coconut Caramel Pecan Triangles this week. They did not disappoint. Sometimes when I come across a few dessert recipes online, I tend to put them together and create an easy, fun recipe that the kids can do with me. This one was just that. We made the cookie base in the bottom of a large casserole dish and they helped spread the dough out. The caramel sauce was too hot for them to help me but I let them crush pecans and mix in a bowl of grated coconut before I added it to my caramel sauce for our toppings. They are great at helping measure out ingredients and telling stories while we bake. Coconut Caramel Pecan Triangles

Cookie Base

  • 2/3 cup sugar
  • 1/2 cup salted butter
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 tsp baking powder


  • 1 1/2 cup sugar
  • 3/4 cup water
  • 1 tbsp vanilla extract
  • 1 cup heavy cream
  • 3 cups lightly crushed pecans
  • 3/4 cup grated coconut
  • 1/2 cup melted dark chocolate


Cookie Base

  1. Preheat oven to 350 F / 175 C
  2. In a large bowl, beat sugar and butter together
  3. Add egg and vanilla and beat until light and creamy
  4. Add baking powder and flour slowly, mixing in between
  5. In a standard casserole dish or medium size deep cookie sheet, spray with non-stick spray
  6. Press dough flat and bake for about 20 minutes
  7. Allow to cool


  1. Boil water and sugar together, stirring constantly until an amber color forms
  2. Turn off heat, add vanilla and heavy cream slowly, it will bubble up, use caution
  3. It will now look like caramel sauce, add coconut and pecans, mix well
  4. Pour over cooled cookie base
  5. Set in fridge over night or freeze for four hours
  6. Cut into triangles and drizzle melted dark chocolate on top

Recipe Notes

  1. Oh boy they look tasty! I’m so rubbish when it comes to baking that I won’t be attempting anything this year. Most of my desserts end up being shop bought. I’d love to be able to do this kind of thing but for some reason I was not blessed with such a talent!

    • I wasn’t either I promise you. I am no chef just better at making my crazy food look nice. lol These are easy as you can’t really go wrong with any of my recipes I make sure they are all easy, fast, and friendly I promise. haha
