Rice Pudding in a Crock-pot (Slow Cooker)

Rice pudding is an all time favorite among the whole family. From babies to toddlers to adults this tasty dish can be enjoyed in a variety of ways with jam, honey, maple syrup, mini pieces of fruit mixed in or just plain. Buba’s favorite way to eat it other than plain is with puree mangoes swirled in. Missy Moo is almost there but not quite on tasting this delicacy. Mommy’s favorite thing about this dish is that it can be made in the crock-pot. I am an avid crock-pot user (slow cooker for UK mommies). If it can be made in a crock-pot, I want to know about it. I make all sorts of dishes, both main meals and desserts in mine. So try this out let me know what you think. It’s nice for the whole family and best of all it takes only a few minutes to prepare MOMMIES!

Rice Pudding

1/2 cup pudding rice 

2 Tbsp. butter 

1/4 tsp. of cinnamon

1/2 tsp. vanilla extract (optional)

1/4 cup granulated sugar

4 cups whole milk

Throw all of the above ingredients into your crockpot (slow cooker) and turn on high. After an hour and a half stir well. Let cook the remainder of the time. Serve hot or cold.

TIP: If it is too sweet cut back the sugar a little bit especially if you are using the vanilla in it. 

Prep Time: 4 mins                Cook Time: 4 hours on high or 8 hours on low

I have tried this recipe a million different ways from recipes online or from family and friends. This combination seems to work best for us but don’t be afraid to alter a few things and make it your own. Why not sprinkle chocolate powder or nutmeg on top, to make it extra yummy?
