I rave about how easy my recipes are and how quick they are to make but this one beats all of them by far. It came about one afternoon and I had the munchies. There was a package of puff pastry in the fridge that I needed to use up and some fruit. At first I was just going to throw some brown  sugar on the puff pastry and bake it like a homemade donut. Then I thought well I need to use the berries up too so I did just that and here this recipe was born. Fruit Puff Pastry Tart Recipe

Fruit Puff Pastry Tart

Ingredients

  • One Sheet of Puff Pastry
  • 1/4 cup soft brown sugar
  • handful of caster sugar
  • 1 cup of mixed fresh berries

Instructions

  1. Preheat oven to 200C/400F/Gas 6
  2. Cut your puff pastry into large rectangles (as picture shows)
  3. Sprinkle soft brown sugar over entire surface
  4. Add cut, washed, fresh berries in the very middle of each rectangle
  5. Sprinkle a little caster sugar on top of berries
  6. Pop into oven for 12-15 minutes or until golden brown
  7. Serve plain, with powdered sugar or frosting on top and a nice hot cuppa.

Plain is great hot out of the oven so the puff pastry really flakes. It’s scrumptious with powdered sugar on top for a sweeter taste and a nice hot cup of coffee or tea. My favorite though and if you want a get a little more fancy for guests coming over is to make up an ease frosting glaze and string across each one. Either way you can’t go wrong with this recipe and you can make it your own by adding so many different things. Try it with chocolate sprinkles, your options are endless.

    • Oh thank you Helen. My kind of recipe too. All my recipes are SUPER easy, simple ingredients and fast to make. I am no chef. It was actually the first time I have ever written in icing I was shocked ! lol
